Brazil Fazenda Sete Cachoeiras - Amazon Conservation Project
THE FARM: Fazenda Sete Cachoeiras is the first carbon-neutral certified coffee estate in the south of Minas Gerais. The estate is heavily invested in transforming the multigenerational land into a sustainable agricultural powerhouse and is continuously modernizing production processes to strengthen coffee quality, social development, and environmental responsibility. In 2021, the estate evaluated the emissions produced by all agricultural activities and energy usage on the farm, and determined that every bag of coffee produced had a carbon footprint of 0.06 tCO2. The report, put together by Carbonext, spanned all greenhouse gas emissions internationally regulated by the Kyoto Protocol, including carbon dioxide, methane, nitrous oxide, propane, etc. Through Verra’s Verified Carbon Standard (VCS) program, Fazenda Sete Cachoeiras offset its greenhouse gas emissions by retiring 38 Verified Carbon Units (VCUs) from the Envira Amazonia Project. The forest conservation program is based in the State of Acre and covers nearly 200,000 hectares of tropical rainforest.
The project is one of the biggest Reducing Emissions from Deforestation and Degradation (REDD+) projects in the world and will result in net positive climate, community, and biodiversity benefits.
OUR ROAST: This is a dry-processed coffee. Dry processing, sometimes called natural processing, leaves the coffee cherry in its natural state, allowing the cherry and bean to dry together. By leaving the cherry attached to the seed, dry processing allows the coffee bean to absorb sugar and flavors from the fruit. While it can be a more challenging and inconsistent process, the best dry-processed coffees are delicious and flavorful, packed with fruity, sugar flavors.
Our roast has a sweet dry fragrance with hints of banana and red apple. Our deep roast brewed well yields a wonderfully balanced cup of cocoa and nougat.
