El Salvador Cerro Las Ranas
THE FARM: Cerro Las Ranas -- the Hill of Frogs -- is named after the farm’s lagoon that is populated by thousands of frogs, located in Apaneca within the department of Ahuachapan, El Salvador. The coffee is produced a family owned operation where Jose Antonio Salaverria and his sons take great pride in their meticulous attention to detail, from year-round farm management to quality control in the cupping lab, and everything in between.
This is a honey processed coffee, which is where the coffee bean does not stay in the cherry like with natural processing, but it also doesn’t have its mucilage completely removed as with washed coffees. In honey processing, the coffee cherries are pulped and then the seeds are dried and fermented in their sticky mucilage. It is this glistening, sticky appearance of the pulped seeds that gives the processing method its name, appearing as if they’ve been coated in honey. Honey processed coffees tend to have sweeter profiles and bigger bodies and are more-often found in Central America.
OUR ROAST: The dry fragrance shows raw sugar sweetness, with raisin and fig smells, and a bit of a winey hint in our roast. The wet aroma is more straight-forward with prominent caramelizing sugar sweetness, and fruits such as plum and cherry hinted at in the steam. The cup is sweet--honey-like-- and smooth, and a fruited character is the focal point.
