THE FARM: Bondowoso is a regency in East Java surrounded by mountains, fertile soil, and an active volcano, famous for emitting sulfuric gases that resemble electric blue lava at night! (sound familiar!?).

This is a wet-hulled coffee, locally known as Giling Basah, which is the method of choice in Indonesia, due to the country’s humid climate. Contrary to other traditional drying methods, where the parchment coffee is dried until it reaches about 12% moisture content, the beans in the Giling Basah process are hulled when they reach between 30 and 35% moisture content; still semi-wet. The green coffee beans are then further dried to reach the exportable 12% moisture content. This operation gives the beans a unique bluish-green appearance and is thought to reduce the acidity and increase the body, resulting in the classic Indonesian cup profile.

OUR ROAST: This roast from Bondowos has a traditional Indonesian feel to it. This is a potent smelling coffee, earthy and with a rustic-tinged sweetness from front to back. The dry grounds give off sweet honey notes, a pipe tobacco accent, and a savory hint that reminds you of mushroom broth. The wet aroma is marked by smells such as dark chocolate, fig, and black tea!
