THE FARM: This lot is from farms around the Gunung Patuha mountain ridge, in Ciwidey, that span an altitude range of 1500 to 1800 meters. It comes from a mill operated by Pak Gunawan; He's worn many hats inside and outside of coffee and recently helped build out a milling operation where he can process lots by Collector, and region. "Collectors" are intermediaries who buy partially processed coffee and full coffee cherry from coffee small scale farmers and then process the coffee down to the dried seed/bean. Whereas many collectors create large blends of all the coffee they buy, Pak Gunawan pays special attention to separating by region, these smaller lot sizes adding a layer of quality control, not to mention more specific provenance.
This lot is honey-processed. Honey Processing is a processing method where the coffee cherry and some of the fruit is mechanically removed, leaving behind a thin layer of fruit which is then laid out on raised beds to dry. Drying can take more than 2 weeks, the prolonged exposure to the coffee fruit causing a very subtle and slow fermentation to occur, and often imparts fruit-like flavors in the coffee itself.
OUR ROAST: This Java lot is certainly fruit-forward. The fragrance produces notes of pear, berry, and rustic sugars. Dark fruits come up in the wet aroma. The fruits in the cup taste clean and sweet up front, with some rustic accents underneath, with accents of natural dried fruits and a nice layer of cocoa as it cooled.
